Lemon Cake Recipe

2 lemons
1/4 tsp. salt
3/4 c. sugar
1/3 c. flour
1 c. milk
Directions:
1. Heat oven to 350 degrees.
2. Using the lemons, grate 1 tsp. lemon zest and squeeze 1/4 cup juice. Separate the egg.
3. Combine the egg yolks, the lemon zest, sugar, lemon juice and salt. Mix at medium speed until a light yellow color. Add in the milk.
4. Gradually add the flour, continue mixing until smooth. Thorougly clean the beaters, then beat the egg whites until they form soft peaks. Fold the egg whites into the egg yolk mixture.
5. Transfer into two greased and floured 9-inch round cake pans.
6. Bake until the top is golden and a toothpick inserted into the center comes out clean, about 35 minutes.
